Egg Bites Recipe with Canadian Bacon and Cheddar Cheese

These egg bites are super versatile; you can add any extra veggies you have unused to add secret veggies to your kids' breakfast. We make these every week at home but whenever we travel I make a batch to pack for the hotel room!


Ingredients

  • 10 large eggs

  • 1 cup cottage cheese

  • 1 cup shredded cheddar cheese

  • 12 slices of Canadian bacon

  • Salt, to taste

  • Pepper, to taste

  • ***You can add in any extra veggies toppings you have extra from the week

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a large mixing bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined.

  3. Grease a muffin tin/liners with cooking spray or oil to prevent sticking.

  4. Cup the Canadian bacon inside the muffin liner

  5. Pour the egg mixture into the muffin tin over canadian bacon, filling each cup about 3/4 full.

  6. Top with shredded cheddar cheese until evenly distributed.

  7. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.

  8. Remove from the oven and let them cool for a few minutes before carefully removing the egg bites from the muffin tin.

  9. Serve warm or store in an airtight container in the refrigerator for up to 5 days.
